Suquet de peix


1 L of fish broth.
1 glass of white wine.
3-4 cloves of garlic.
One onion.
A carrot.
A leek.
Fish to taste.

The suquet de peix is ​​a typical dish of Valencian cuisine. It is a recipe with an intense flavor that fishermen prepare in the past at the end of their day and on the boat. It consists of a simple stew made from battered fish.

We brown three or four cloves of garlic in a casserole and reserve them to later make the mince with the parsley. Meanwhile, we take the heads and the fish bones to prepare a broth. You can add vegetables such as leek or carrot.

Sauté a little onion and add crushed tomato. We add white wine and reduce the mixture. Then we cut potatoes into cubes and add them to this mixture, sautéing everything for about 5-6 minutes.

We cover everything with the fish stock and cook it over medium heat for about 15-20 minutes. Halfway through cooking, we will add the minced garlic with the parsley.

Several minutes before the potatoes are cooked, we add some slices of fish, previously seasoned.

The popular Omega 3s are a group of fatty acids (fat molecules receive this technical name) that respond to a special structural formation and that benefit the body to organize the digestion process (transformation of fats and correct management of these so that our system is not saturated or accumulates them incorrectly and that this cause can generate future health problems).

This type of fat is found in oily fish (salmon, bonito, etc.). These fish, although they are more difficult to digest, provide all the variety of vitamins and minerals related to fatty foods, which are basic in our diet.
