400 gr of noodles.
1 good size squid.
0.5 kg of crushed fried tomato.
2 cloves of garlic
A splash of white wine.
1 tablespoon of saffron.
Salt and olive oil.
The first thing we are going to do to prepare these noodles is to make the fish stock. For this we use the fish remains that we have reserved and cook them in a saucepan with plenty of water. After 20 minutes of cooking we remove it and strain it to remove the offal. We reserve it.
Next, we chop the onion and garlic and sauté them with a little olive oil. When it is ready we add some peeled prawns and sauté everything for a few minutes.
To continue with the preparation of the noodle, we add sliced squid to this sauce. We cook them a little and then we add the crushed fried tomato. We sauté everything and add a splash of white wine. We cook everything until the alcohol in the wine has evaporated.
Then we take the fish broth that we had previously reserved and cook it all. When it boils add the noodles, crushed saffron and a pinch of salt.
Once this is done, we put it in the oven for about 15 minutes. If it is too dry, we can rectify it by adding more broth.
