INGREDIENTS
1/2 kg of prawns
2 eggs
3 tablespoons tomato sauce
2 tablespoons brandy
3 tablespoons of cream
1 lettuce
1 lemon
White pepper
oil
Salt
ELABORATION
After cooking for 10 minutes in boiling water and salt, the prawns are peeled, reserving six with their skin for garnish.
This same recipe can be made with prawns. The lettuce is washed well, taking advantage only of the bud and the white parts; it is chopped very fine, also reserving six leaves for decoration.
With the egg yolks and oil, prepare a mayonnaise sauce, to which a little white pepper and lemon juice will be added.
This mayonnaise is poured into a bowl, where it has to be mixed with the tomato sauce, the cream – instead of cream, they can be whipped to the point of snow – and the brandy.
Finally, the chopped lettuce and the whole prawns are added.
To present the cocktail, it is placed in crystal glasses, adorned with a prawn. Served cold
