Chili sin carne – that’s how it works

Chili sin carne is a fiery, rich stew – completely without animal products! We explain how the vegan chili is prepared, which ingredients make it particularly tasty, and which meat substitute is best.

Chili sin carne – ingredients for 4 people:

  • 150 g soy chops (also known as soy granules)
  • 2 onions
  • 2 cloves of garlic
  • 4 tbsp olive oil
  • 3 tbsp tomato paste
  • 2 cans (425 ml each) of chunky tomatoes
  • 250 ml vegetable broth
  • 1 can of kidney beans
  • 1 can of corn
  • 1 red chili pepper
  • Salt, pepper

Chili sin carne – it’s that easy:

  1. Soak the soy strips according to the instructions on the packet. Peel and finely dice the onions and garlic. Heat the oil in a saucepan and sauté the onions and garlic. Stir in tomato paste and sweat.
  2. Drain, squeeze and finely chop the soy strips. Add to the saucepan, fry a little and deglaze with canned tomatoes and broth. Approx. Simmer for 30 minutes over low heat.
  3. Rinse the corn with cold water. Clean the chili, cut lengthways, wash and remove the seeds. Cut the pod into small pieces. Add the chili, beans, and corn and simmer for another 10 minutes. Season with salt and pepper.

Chili sin carne – tips & tricks for preparation

  1. Depending on your taste, you can also add beans and corn with the canned liquid (or part of it) to the chili, so the starch it contains gives it an even better and creamier consistency.
  2. Cocoa or coffee provides a special aroma – if you add 1 tablespoon of cocoa or about 100 – 200 ml strong coffee, you give the chili sin carne a slightly bitter, full-bodied note. It goes well with the fiery, fruity taste.
  3. The chili tastes even better if you let it sit for a day! If you like it hot, just add 1-2 chili peppers to it. Alternatively, chili powder can also be used.

The best meat substitute for your chili

If you don’t want to use soy shreds, chili sin carne can also be wonderfully prepared with tofu , lentils or jackfruit . Crumble the tofu with your hands and fry briefly, then add the liquid and remaining ingredients. For 4 people you need 200 g tofu or 150 g jackfruit. The preparation with jackfruit works just like that with tofu.

Chili sin carne – topping and side dishes

A big dollop of créme fraîche tastes really good on a hearty chili! If you want to do without animal products for the topping, you can, for example, buy a vegan sour cream or prepare it yourself: Soak 125 g unsalted cashew nuts in hot water for about 30 minutes and then combine with 60 ml lemon juice, 1 clove of garlic, salt, and pepper Mix the creamy mixture.
